   ضایعات مواد غذایی خانوار و عوامل موثر بر آن در شهرستان نجف‌آباد

چکیده    پیمایش حاضر با هدف بررسی ضایعات مواد غذایی خانوار و عوامل موثر بر آن صورت پذیرفت. جامعه آماری پژوهش شامل خانوارهای ساکن در بخش مرکزی شهرستان نجف آباد بودند که بر اساس جدول تعیین حجم نمونه بارتلت و همکاران، 405 خانوار به عنوان نمونه پژوهش تعیین و از طریق نمونه‏گیری طبقه‏ای گزینش شدند. در هر خانوار نمونه، فردی در دامنۀ سنی 15 تا 64 سال که مسئول حداقل نیمی از پخت و پز، خرید و مدیریت منزل بود در فرایند تحقیق شرکت داده شد. ابزار گردآوری داده ها، پرسش نامه ای محقق ساخته بود که روایی صوری آن توسط پانلی از متخصصان تایید و پایایی آن نیز با انجام مطالعه ای پیش آهنگ و محاسبه ضریب آلفای کرونباخ (0.60 تا 0.79)، به دست آمد. نتایج حاصل از تحلیل خوشه ای نشان داد خانوارهای مورد مطالعه براساس میزان ضایعات غذایی به سه دستۀ‏ مسرف، خانوار با ضایعات غذایی متوسط، و صرفه‏جو قابل تفکیک اند. فزون بر آن، نتایج حاصل از تحلیل رگرسیون سلسله‏مراتبی نشان داد، متغیر آگاهی اثر افزایشی و متغیرهای هنجار اجتماعی، نگرش به ضایعات، دانش کاهش ضایعات، مهارت کاهش ضایعات، وجود زیرساخت، و داشتن برنامه زمانی اثر کاهشی بر میزان ضایعات خانوار داشته و در مجموع، 25 درصد از تغییرات واریانس میزان ضایعات غذایی خانوار را تبیین می نمایند.

   Household Food Waste and Its Affecting Factors in Najaf Abad County

Abstract    The purpose of this survey research was to investigate the food waste in household and it’s affecting factors. The statistical population of the study consisted of all households in Central district of Najaf Abad County that based on Bartlett and colleagues’ table for determining sample size, 405 households were selected as a research sample and were chosen by stratified proportionate random sampling technique. In each sample household, a person between the ages of 15 to 64 who was responsible for at least half of cooking, shopping and managing the home was involved in the research process. The data collection instrument was a researcher’s developed questionnaire whose face validity was confirmed by a panel of experts and the reliability of the questionnaire was also evaluated by conducting a pilot test study and calculating the Cronbach’s alpha coefficient (0.600.79). The results of cluster analysis showed that the studied households were separated into three different clusters, the throwaway people, households with moderate food waste, and saved people. Moreover, the results of hierarchical regression analysis showed that the awareness construct had incremental effect and social norm, attitudes toward food waste, knowledge of waste reduction, skills to manage food consumption, existence of infrastructure, and having a time schedule had decreasing effects on household food waste behavior.
