بررسی گندم تولیدی کشور ایران از نظر میزان فلزات سنگین

این مطالعه با هدف بررسی میزان آلودگی گندم های تولیدی کشور به فلزات سنگین کادمیم و سرب و اندازه گیری محتوای عنصر روی در سال زراعی 96-1395 انجام شده است. به همین منظور، مقدار فلزات در 419 نمونه گندم از 31 استان کشور بعد از آماده سازی و عصاره گیری، توسط دستگاه جذب اتمی آنالیز شدند. نتایج نشان داد از میان 419 نمونه گندم تجزیه شده، تنها در 3 نمونه (72/0 درصد) غلظت سرب بیشتر از شاخص استاندارد ملی ایران (15/0 میلی گرم در کیلوگرم) بود. همچنین غلظت کادمیم فقط در 36 نمونه (6/8 درصد) بیشتر از شاخص استاندارد ملی ایران (03/0 میلی گرم در کیلوگرم) می باشد. در ادامه نتایج اندازه گیری میزان عنصر روی در نمونه های مختلف گندم تولید شده در سطح ایران، نشانگرکمبود عنصر روی در بخش اعظم نمونه های گندم در استان های مختلف است. در 79 درصد از نمونه های گندم مورد بررسی، میزان روی از حد مطلوب (mg/kg50-30) کمتر بوده است.

investigation on the concentration of heavy metals in the production of wheat in iran

the aim of this study was to investigate the contamination of wheat production in iran with heavy metal cadmium and lead and to measure the content of zinc content in 1395-96. for this purpose, the amount of metals in 419 wheat samples from 31 provinces of the country after preparation and extraction was analyzed by graphite furnace atomic absorption spectrometry and flame atomic absorption spectrometry. the results of this study showed that among the 419 sampled wheat samples, only 3 samples (0.72%) of lead concentration were higher than the national standard index of iran (0.15 mg / kg). also, the concentration of cadmium in 36 samples (8.6%) is higher than the national standard index of iran (0.03 mg / kg). in addition, the results of zn measurements in different wheat samples produced in iran indicate zn content in most of wheat samples in different provinces. so that in 79% of wheat samples that were examined, zinc level was less than optimal (30-50 mg / kg).
