فرآیند تولید محصولات کشاورزی، فرآیندی زمان بر و هزینه بر بوده است . بدیهی است که طی تولید محصول نهایی، مقداری بقایای گیاهی و پسماندهایی تولید شود . این ضایعات عمدتا باعث ایجاد مشکلات زیست محیطی و از بین بردن آنها صرف هزینه های زیادی می باشد .وجود مقدار نامتعارف ضایعات محصولات کشاورزی ، یکی از معضلات و تهدیدهای پیشروی تحقق امنیت غذایی در جوامع بشری است که تحت شرایط و روشهای نامناسب برداشت، حمل و نقل، ذخیره سازی، توزیع و مصرف تبدیل به ضایعات گردیده و از دسترس مصرف کننده خارج میشود. از اینرو به نظر میرسد که با پرداختن و عنایت ویژه به جایگاه مراقبتها و فناوریهای پس از برداشت محصولات کشاورزی و توسعه صنایع تبدیلی بتوان از ضایعات محصولات کشاورزی به میزان قابل توجهی کاست. با کاهش ضایعات محصوالت کشاورزی علاوه بر بازگرداندن حجم قابل توجهی از محصولات به چرخه مصرف، گامهای بلندی نیز در راستای افزایش بهره وری منابع تولید، از جمله آب و سایر نهاده های تولید (خاک، کود، سم، سوخت و انرژی) میتوان برداشت.
