جایگاه علم اندازه شناسی در ارزیابی ایمنی و کیفیت مواد غذایی طیب

مقدمه- ایمنی مواد غذایی تاثیر مستقیم بر سالمت فردی و اجتماعی دارد و با توجه به جهانی شدن زنجیره های تامین مواد غذایی از مزرعه تا سفره، استفاده از رویکرد جدید یکپارچگی مواد غذایی در تدوین استانداردهای ملی و بین المللی در حوزه مواد غذایی به عنوان مناسب ترین راهکار در ایجاد ایمنی و امنیت مواد غذایی پیشنهاد میشود. از آنجایی که ایمنی یکی از جنبههای غذای طیب است، الزم است محتوای آالیندهها با حدود استاندارد در قوانین ملی و بین المللی مطابقت داشته باشد و اندازه گیری این آلاینده ها دقیق باشد. برای تایید این الزامات، الزم است مفاهیم اندازه شناسی در آنالیزهای مواد غذایی به منظور روشهای تحلیلی حساس، دقیق و استاندارد شده به کار گرفته شود و کاربرد آن روش ها در کلیه آزمایشگاه ها هماهنگ شود. مواد و روش ها - این مقاله مروری به بررسی نقش علم اندازه شناسی در رویکرد جدید یکپارچگی مواد غذایی و اهمیت آن در ارزیابی ایمنی مواد غذایی پرداخته است و بدین منظور مقالات مرتبط از سال 2010 تا 2022 در پایگاه های داده web of science, pubmed, scholar google جستجو شد که از بین 7 مقاله یافته شده در این خصوص، 4 مقاله مرتبط مورد بررسی قرار گرفت. نتیجه گیری- از دیدگاه برند طیب برای اطمینان از بی خطر بودن غذایی که می خوریم و انطباق ویژگی های آن با استانداردهای مربوطه ، لازم است آزمایشاتی با استفاده از دستگاه های مختلف انجام شود و در صورتی که این دستگاه ها دقت یا دقت را نداشته باشند و کالیبره نشده باشند، اعداد به دست آمده قابل اعتماد نخواهند بود و در نتیجه ممکن است طیب نباشد. بنابراین استفاده از مترولوژی برای اندازه گیری مخاطرات شیمیایی و میکروبی مواد غذایی مانند آلاینده ها، فلزات سنگین، باقیمانده های داروهای دامپزشکی، افزودنی های غذایی، سموم میکروبی و غیره برای اعطای برند طیب به غذاها ضروری است.

introduction-food safety has a direct impact on individual and social health, and considering the globalization of food supply chains from farm to fork, the use of new approach of food integrity in national and international standards codification as the most appropriate method in food safety and security is suggested. given that safety is one of the “tayyeb” food aspects, it is necessary that the content of contaminants is consistent with the limits imposed by the law and that the measurements of these contaminants are accurate. to verify these requirements, it is necessary to apply metrological concepts to food analyses to provide sensitive, accurate and standardized analytical methods and to harmonize their application in analytical laboratories.material and methods (or methodology)- this review examines the role of metrology in the new approach of food integrity and its importance in food safety assessment with particular focus on “tayyeb food”. so, related papers from 2010 to 2022 were searched in google scholar, pubmed, web of science databases. among the 7 articles found in this regard, 4 related articles were used.conclusion-in order to ensure that the food we eat is safe from tayyeb s point of view and its characteristics are according to the relevant standards, it is necessary to conduct tests using different devices, and if these devices don t have the accuracy or are not calibrated, the obtained numbers will not be reliable and as a result, it may not be “tayyeb”. so, application of metrology to measure food chemical and microbial risks such as pollutants, heavy metals, residues of veterinary drugs, food additives, microbial toxins, etc. is necessary to grant a tayyeb brand to foods
