چکیده
|
هدف: امروزه کاهش مصرف نمک طعام (nacl) به منظور پیشگیری یا درمان بیماریهای قلبی عروقی به شدت توصیه میشود. در این راستا جایگزینهای مختلفی برای نمک طعام پیشنهاد شدهاند از جمله نمکهای فلزی مثل kcl یا چاشنیهای گیاهی. این مطالعه با هدف معرفی نمک جلبک دریایی و مقایسه آن با نمک دریای سنتی و نمک طعام از لحاظ محتوای سدیم و عناصر معدنی انجام شده است.مواد و روشها: پس از غربالگری اولیه، دو گونه sargassum sp. وnizamuddinia zanardinii از خانواده sargassaceae از گروه ماکروجلبکهای قهوهای انتخاب و به ترتیب از سواحل جزیره قشم و چابهار به صورت تودهای جمعآوری، شستشو، خشک و پودر شدند. برای شناسایی عناصر از آنالیز eds و icp-oes استفاده شد.نتایج: نتایج آنالیز eds دو نمونه نمک جلبک دریایی وجود ید را به میزان 0.3 و 0.4 درصد وزنی نشان داد. درحالیکه در دو نمونه نمک دریای سنتی و نمک طعام تنها عناصر ثبت شده، سدیم و کلر بود. در دو نمونه نمک جلبک دریایی درصد بالاتر عنصر پتاسیم در مقابل درصد پایین عنصر سدیم در هردو آنالیز eds و icp نشان داد نمک غالب در این دو نمونه، نمک پتاسیم (kcl) است.نتیجهگیری: این مطالعه به طور بالقوه امکان تولید نمک جلبکی را با استفاده از ماکرو جلبکهای جنوب کشور تائید کرد. این محصول نوآورانه علاوه بر کمک به سلامت عمومی، میتواند با جلب مشارکت جوامع ساحلی در کشت و پرورش ماکروجلبک، فرصتهای شغلی جدیدی را برای ساکنین نوار ساحلی جنوب کشور فراهم کند.

Abstract
|
objective: reduction of the consumption of sodium salt (nacl) is widely recommended in order to prevent or treat cardiovascular diseases.various alternatives for table salt have been proposed، including metal salts such as kcl or herbal seasonings. this study aims to introduce seaweed salt and compare it with traditional sea salt and table salt in terms of sodium content and minerals.methods: two species of brown macroalgae sargassum sp. and nizamuddinia zanardinii were collected from the coasts of qeshm island and chabahar respectively. the samples washed، dried and made into powder. eds and icp-oes analysis were used to detect the elements.results: the results of eds analysis of the two proposed macroalgae samples showed the existence of iodine at the rate of 0.3 and 0.4% by weight in both samples. while in traditional sea salt as well as table salt، the only elements recorded were sodium and chlorine. in two seaweed salt samples، the higher percentage of potassium compared to the lower percentage of sodium in both eds and icp analysis reveald that the predominant salt in both samples was potassium salt (kcl).conclusion: this study potentially confirmed the possibility of seaweed salt production using local macroalgae. in addition to helping public health، this innovative product can provide new job opportunities for the indigenous people by attracting the participation of coastal communities in the cultivation of macroalgae.
