چکیده    Values are compared in figure. first ink contains 2% sodium alginate and the concentration of gum arabic in other ink is 25% to have same viscosity. beetroot concentration in both inks is constant (6%). so the ratio of dye and solid mass of thickeners is different in inks. it’s clear from the results in figure that l* and a* are almost constant until the day 35, and l* increases over time, as well as a* decreases. after 240 days l* and a* reaches a constant value, which shows that the range of color changes of this indicator is between day 35 to 240. also it is observable that a* of sodium alginate in first day is 9.82, although this value is 7.74 for gum arabic. this difference in values can be attributed to the difference in ratio of dye and thickener in each of the inks. this shows that a* increases as the ratio of dye and thickener increases.
