بررسی وضعیت آلودگی بافت‌های مختلف گوسفند به عناصر سنگین در اطراف شهرک صنعتی تخصصی روی در استان زنجان

زمینه و هدف: برای حفظ سلامت مصرف‌کنندگان مواد غذایی و نیل به ایمنی غذایی، کنترل بیشینه مجاز فلزات سنگین در مواد غذایی باید مورد توجه قرار گیرد. مطالعه حاضر با هدف بررسی غلظت عناصر سنگین مس، روی، سرب و کادمیوم در بافت‌های حیوانی دام‌های منطقه اطراف شهرک تخصصی روی انجام شد.مواد و روش‌ها: تعداد 10 نمونه از هر یک از بافت‌های گوسفند (گوشت، کبد، کلیه و استخوان) در هر یک از چهار جهت جغرافیایی شهرک تخصصی روی تهیه شد. همچنین به‌منظور مقایسه وضعیت موجود در منطقه مورد مطالعه با مناطق غیرآلوده، منطقه شاهد (منطقه قره‌پشتلو زنجان) در نظر گرفته شد. برای هضم مواد آلی نمونه‌ها از روش خاکستر خشک استفاده شد.یافته‌ها: بر اساس نتایج آزمایش، غلظت عنصر مس در عضله و کبد گروه شاهد به‌طور معنی‌داری بالا بود (0/05>p). غلظت عنصر روی تحت تاثیر مناطق مورد مطالعه قرار نگرفت. انباشت عنصر سرب در کبد و استخوان و کادمیوم در عضله و کبد حیوانات موجود در منطقه غرب شهرک تخصصی روی به‌طور معنی‌داری بالا بود (0/05>p). مقدار مس در بافت‌های کلیه و استخوان، مقدار سرب در بافت‌های عضله و کلیه و مقدار کادمیوم در کلیه و استخوان تحت تاثیر قرار نگرفت. انباشت مس رابطه معکوس با عناصر سرب و کادمیوم داشت.نتیجه‌گیری: با وجود انباشت عناصر سنگین در منطقه غرب شهرک تخصصی روی، غلظت این عناصر در دام و محصولات دامی تولید شده در حومه شهرک در دامنه حد مجاز قرار داشته و خطری برای مصرف‌کنندگان ندارد.

Survey of Pollution With Heavy Metals in Various Tissues of Sheep in the Vicinity of Specialized Industrial Park of Zinc in Zanjan Province

Abstract Background and Aim: To maintain the health of consumers and achieve food safety, the control of maximum allowed heavy metals in food should be considered. This study aimed to investigate the concentration of heavy metals of copper (Cu), zinc (Zn), lead (Pb), and cadmium (Cd) in livestock tissues in the vicinity of Zinc Specialized Industrial Park. Material and Methods: Ten samples were collected from each sheep tissue (including meat, liver, kidney, and bone) in each of the four geographical directions. To compare the current situation, samples from a control area (Qarah Poshtlu area of Zanjan) were also considered. A dry ash method was used to digest organic matter. Results:Based on the results, the concentration of Cu was significantly high in the muscle and liver of the control group (P <0.05). The concentration of Zn was not affected by the study areas. The accumulation of Pb in the liver and bone and Cd in the muscle and liver of animals was significantly high in the western part of the study area (P <0.05). The levels of Cu in the kidney and bone tissues, Pb in the muscle and kidney tissues, and Cd in the kidney and bone tissues were not affected. The accumulation of Cu was inversely related to Pb and Cd. Conclusion:In general, the results showed that despite heavy metal accumulation in the west of the study area, the concentrations of these metals in the tissues of sheep around it were within the allowable range and they were not dangerous to consumers.
