خواص کاربردی و سلامتی‌بخش ترکیبات زیست‌فعال آبزیان

جست‌و‌جو، شناسایی و در نهایت استفاده از ترکیبات زیست فعال مهم و با ارزش، یکی از اهداف اصلی جهت مدیریت اصولی و توسعه پایدار صنعت شیلات می باشد. شیلات و آبزی پروری امروزه نقش بسیار ویژه ای در اقتصاد، تامین رژیم های غذایی سالم پایدار و توسعه داروهای جدید جهت برقراری سلامت مردم دارند و آبزیان منبع غنی از پروتئین، اسیدهای آمینه ضروری، اسیدهای چرب (اشباع، تک غیراشباع، چند غیراشباع (امگا 3 و امگا 6))، کربوهیدرات ها، ویتامین‌ها و مواد معدنی می باشند. از طرف دیگر، در دنیای امروز، مقادیر زیادی از صیدهای ضمنی و جانبی شیلات یا صنایع فرآوری آبزیان دور ریخته شده و باعث مشکلات زیست محیطی فراوان می گردند. با توجه به ارزش غذایی و وجود ترکیبات زیست فعال در محصولات جانبی حاصل از آبزیان، این موجودات می توانند به‌عنوان منبع غنی از این ترکیبات مورد استفاده قرار گیرند. نتایج این مطالعه نشان داد که ترکیبات زیست فعال استخراج شده از آبزیان، نقش مهمی در رژیم غذایی، افزایش سلامت، پیشگیری و درمان بیماری های مختلف در انسان ها ایفا می کنند. این ترکیبات حاوی منابع ارزشمندی مانند پپتیدها و هیدرولیزهای پروتئینی، اسیدهای چرب چند غیراشباعی، کلاژن و ژلاتین، پلی ساکاریدها، کیتین و کیتوزان، گلیکوزآمینوگلیکان‌ها، کاروتنوئیدها، ترکیبات فنولی، عناصر کمیاب و دیگر ترکیبات طبیعی با ظرفیت های آنتی اکسیدانی، ضدمیکروبی، ضدویروسی، ضدسرطانی، ضدالتهاب، ضددیابت، ضد انعقاد، ضدفشارخون، ضدپیری، محافظت کننده قلب، محافظت کننده عصبی و تعدیل کننده ایمنی هستند. بر این اساس، آن ها به‌دلیل ظرفیت عملکردی خاصشان کاربردهای متعددی در صنایع غذایی-دارویی، پزشکی، کشاورزی، زیست فناوری، آرایشی و دیگر صنایع پیدا کرده اند. هدف از این مطالعه، مروری بر اهمیت خواص کاربردی و سلامتی بخش ترکیبات زیست فعال استحصالی از آبزیان است.

functional and health properties of bioactive compounds from aquatics

searching, identifying, and ultimately using important and valuable bioactive compounds is one of the main goals for the principled management and sustainable development of the fisheries industry. nowadays, fisheries and aquaculture have a very special role in the economy and providing sustainable healthy dietaries and the development of new drugs to establishment human health and aquatics are a rich source of proteins, essential amino acids, fatty acids (saturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids (omega-3 and omega-6)), carbohydrates, vitamins and minerals. on the other hand, in today’s world, a large amount of the by-catch of fisheries or aquatics processing industries is thrown away and causes many environmental problems. considering the nutritional value and the presence of bioactive compounds in by-products from aquatics, these organisms can be used as a rich source of these compounds. the results of this study showed that bioactive compounds extracted from aquatics, play an important role in dietary, increasing health, and prevention and treatment of various diseases in humans. these compounds contain valuable resources such as peptides and protein hydrolysates, polyunsaturated fatty acids, collagen and gelatin, polysaccharides, chitin and chitosan, glycosaminoglycans, carotenoids, phenolic compounds, rare elements and other natural compounds with antioxidant, antimicrobial, antiviral, anticancer, anti-inflammatory, antidiabetic, anticoagulant, antihypertensive, antiaging, heart protective, neuroprotective and immune-modulating potentials. according to this, they have found many applications in the nutrient-pharmaceutical (nutraceutical), medical, agriculture, biotechnology, cosmetic industries, and other industries due to their specific functional potential. the purpose of this study is to review the importance of functional and health-giving properties of bioactive compounds extracted from aquatics.
