چکیده
|
Casein is a phosphoprotein in bovine milk and accounts for almost 80 percent of its total protein. through multiple phosphoseryl residues, casein phosphopeptides can stabilize calcium phosphate in a state-forming casein phosphopeptide-amorphous calcium phosphate nanocomplex. in additional, casein is found in foods like milk, yogurt and chocolate, it is also used in several oral hygiene products (toothpastes, mouthrinses, chewing gums) and dental filling materials (resin composite, glass ionomer cement, fissure sealent) in forming casein phosphopeptideamorphous calcium phosphate nanocomplexes. these products are supposed to prevent demineralisation and enhance remineralisation of dental hard tissues and thus can play a major role in prevention and treatment of initial caries or erosively dissolved enamel. the aim of this review was to present current findings about foods and dental products containing casein.
