سیرتاریخی مطبخ تا آشپزخانه در معماری خانه های ایرانی-اسلامی

معماری در بیان معانی فرهنگی و نمادین و در چگونگی تعاملات افراد نقش به‌سزایی دارد. بسیاری از ارزش‌های فرهنگ و نمادین از طریق انتخاب در مصالح، رنگ، فرم، اندازه، مبلمان و محیط پیرامون ساختمان بیان می‌شود. مطبخ و آشپزخانه جزئی لاینفک از معماری ایرانی- اسلامی در تاریخ معماری ایران می‌باشد. هدف از انجام این پژوهش بررسی سیر تاریخی مطبخ تا آشپزخانه در معماری خانه‌های ایرانی- اسلامی می‌باشد. این پژوهش به روش توصیفی و تاریخی انجام شده است و با تکیه بر داده‌های منابع کتابخانه‌ای انجام شده است. در نهایت، نتیجه‌ای بدین شکل حاصل شد که مطبخ شکل اولیه آشپزخانه بوده و وجه اشتراکاتی نیز با آن داشته که در طول تاریخ تغییر شکل داده و به شکل مطبوع‌تر و کاربردی‌تری مبدل شده است. نکتۀ قابل‌تامل دیگر در این خصوص تفاوتی است که در میان سازۀ مطبخ یا آشپزخانه در میان اقشار مختلف جامعه وجود داشته است.اهداف پژوهش:بررسی گسست‌های مرتبط با پارادایم در معماری خاص محیط مطبخ تا آشپزخانه.بررسی گونه‌های مختلف مطبخ و آشپزخانه در میان اقشار مختلف در دوره‌های زمانی متفاوت.سوالات پژوهش: براساس دیدگاه توماس کوهن، گسست پارادایم در گونه‌های مختلف مطبخ و آشپزخانه چگونه است؟گونه‌های مطبخ و آشپزخانه در میان اقشار مختلف در زمان‌های متفاوت چگونه است؟

the historical evolution of the kitchen in iranian-islamic residential architecture

architecture plays a significant role in expressing cultural and symbolic meanings, as well as in shaping human interactions. many cultural and symbolic values are conveyed through the choice of materials, colors, forms, dimensions, furnishings, and the surrounding environment of a building. the kitchen, as an integral part of iranian-islamic architecture, has a rich history in iranian architectural traditions. this research aims to explore the historical evolution of the kitchen in iranian-islamic residential architecture. the study adopts a descriptive and historical methodology, relying on data from library resources. the findings reveal that the traditional matbakh (kitchen) served as the precursor to the modern kitchen, sharing common features while undergoing transformations over time to become more functional and aesthetically pleasing. another noteworthy observation is the variation in kitchen structures across different social strata throughout history.research objectives:to examine paradigm shifts related to the architecture of the kitchen space.to explore the diverse forms of kitchens across different social classes in various historical periods.research questions:based on thomas kuhn’s perspective, how do paradigm shifts manifest in the evolution of kitchen forms?how have kitchens varied across different social classes and historical periods?
