بررسی ویژگی‌های فیزیکوشیمیایی و میکروبی پودر سنجد خرده فروشی شده در شهر اردبیل

زمینه و هدف: با توجه به ارزش تغذیه ای و خواص آنتی اکسیدانی، ضد میکروبی، ضد التهابی و ضد سرطانی سنجد، مصرف آن در سطح جامعه افزایش یافته است. از این رو هدف اصلی این مطالعه، بررسی ویژگی های فیزیکوشیمیایی و میکروبی پودر سنجد خرده فروشی شده در شهر اردبیل بود.روش کار: در این مطالعه توصیفی، 20 نمونه 100 گرمی (10 نمونه از عطاری ها و 10 نمونه از خشکباری ها) به صورت تصادفی- خوشه ای و بر اساس پراکندگی محل های فروش از نواحی مختلف شهر اردبیل انتخاب شد. اندازه گیری میزان رطوبت، خاکستر و ph و ارزیابی آلودگی میکروبی با استفاده از استانداردهای ملی ایران صورت گرفت. از آزمون‫های پارامتریک برای تحلیل داده ها استفاده شد.یافته ها: دامنه میزان رطوبت، خاکستر کل و ph به ترتیب 16.66-8.78 (درصد)، 7.40-1.85 (درصد) و 5.12-4.69 بود. میانگین میزان رطوبت و خاکستر کل پودرهای سنجد بررسی شده تفاوت معنی داری با مقادیر مجاز توصیه شده داشت (p<0.001). بررسی آلودگی میکروبی نشانگر آلودگی بالای نمونه های مورد مطالعه بود.نتیجه گیری: نتایج مطالعه حاضر نشان داد که میزان رطوبت و خاکستر کل و آلودگی میکروبی پودرهای سنجد عرضه‫شده در سطح خرده فروشی شهر اردبیل بالا بود و از این‫رو برای مصرف نامناسب می باشند.

evaluation of physicochemical and microbial properties of retailed elaeagnus angustifolia powder in ardabil city

background & objectives: regarding the nutritional value and antioxidant, antimicrobial, anti-inflammatory and anti-cancer properties of elaeagnus angustifolia, its consumption has been increased. therefore, the main objective of this study was to evaluate of physicochemical and microbial properties of retailed elaeagnus angustifolia powder in ardabil city.methods: in this descriptive study, 20 samples of 100 grams (10 specimens from groceries and 10 samples from nuts shops) were selected randomly and clustered based on the distribution of sales areas in different districts of ardabil. measurements of moisture content, total ash, ph and also the evaluation of microbial contamination were carried out using national standards of iran. the parametric tests were used for data analysis.results: the range of moisture content, total ash and ph were 8.18-16.66%, 1.85-7.40 % and 4.69-5.12, respectively. the mean moisture content and ash of all studied elaeagnus angustifolia powder were significantly different from the recommended standard values (p<0.001). the survey of microbial contamination showed high contamination of samples.conclusion: the results of the study showed that the moisture content, total ash and microbial contamination of retailed elaeagnus angustifolia powders were high in ardabil. therefore, these powders were inappropriate for consumption.
