   تاثیر پوشش فعال بر پایه زیست پلیمرهای پلی ساکاریدی و پروتئینی بر ماندگاری گوشت مرغ

چکیده    اثربخشی افزودنی های مورد استفاده در پوشش های فعال تحت تاثیر بسترهای مورد استفاده قرار می گیرد. این تحقیق با هدف بررسی اثربخشی اسید آسکوربیک (ویتامین ث) و پروپیل گالات در پوشش های زیست پلیمری آلژینات (پلی ساکاریدی) و کازئینات (پروتئینی) به صورت پوشش فعال بر ماندگاری فیله مرغ اجرا شد. تیمارها شامل فیله های مرغ فاقد پوشش (شاهد) و دارای پوشش فعال آلژینات سدیم یا کازئینات سدیم، هریک حاوی اسید آسکوربیک یا پروپیل گالات، در مجموع پنج تیمار، در قالب یک طرح بلوک کامل تصادفی مورد تجزیه و تحلیل قرار گرفتند. فیله ها با یکی از محلول ها به روش غوطه وری پوشش دهی شده و به مدت 12 روز در دمای یخچال نگهداری شدند. در فواصل معین زمانی، جهت اندازه گیری نشانگرهای میکروب شناسی، شیمیایی و اکسایشی نمونه گیری انجام شد. نتایج نشان داد پوشش فعال موجب افزایش زمان ماندگاری فیله ها شد. در این بین آلژینات سدیم عملکرد مطلوب تری نسبت به کازئینات سدیم داشت و توانست ماندگاری فیله ها را حداقل به مدت 3 روز افزایش دهد. کمترین تغییرات و تعداد باکتری مزوفیل (log cfu/g 5.75)، باکتری سرماگرا (log cfu/g 4.13)، ph (5.80) و مجموع ترکیبات ازته فرار (mg/100g 14.90) در فیله های دارای پوشش فعال آلژینات سدیم حاوی اسید آسکوربیک و کمترین مقدار عدد پراکساید (meq/kg 4.37) و اندیس تیوباربیتوریک اسید (mg mda/kg 0.80) نیز در فیله های دارای پوشش فعال آلژینات حاوی پروپیل گالات دیده شد (0.05>p). نوع پوشش فعال بر ظرفیت نگهداری آب فیله ها تاثیر معنی داری نداشت. به طور کلی می توان از پوشش فعال برپایه آلژینات سدیم حاوی افزودنی مجاز و ایمن اسید آسکوربیک همراه با انواع پلیمرهای سنتزی مرسوم برای افزایش ماندگاری فیله مرغ استفاده کرد.

   the effect of active coating based on polysaccharide and protein biopolymers on the shelf life of chicken meat

Abstract    considering the substrates used, the effectiveness of additives is influenced in active packaging. this study aimed to investigate the effectiveness of ascorbic acid (vit c) and propyl gallate (pg) in alginate- and caseinate-based biopolymers as active packaging on the shelf life of chicken fillets. the treatments included chicken fillets without coating (control) and with active packaging of sodium alginate or sodium caseinate, each containing vit c or pg, a total of five treatments, were analyzed in the form of a randomized complete block design. an immersion method was used to coat fillets with each solution and, then kept at refrigerated storage for 12 days. sampling was periodically done to assess microbiological, chemical and oxidative indicators. the results showed that active packaging increased the shelf life of fillets. meanwhile, sodium alginate had a better performance than sodium caseinate and was able to increase the shelf life of fillets for at least 3 days. the lowest changes and final amount of mesophilic bacteria (5.75 log cfu/g), psychrophilic bacteria (4.13 log cfu/g), ph (5.80) and total volatile nitrogen compounds (14.90 mg/100g) in fillets with active packaging of sodium alginate containing vit c and the lowest peroxide value (4.37 meq/kg) and thiobarbituric acid index (0.80 mg mda/kg) were also seen in fillets with active alginate coating containing pg (p<0.05). the type of active packaging had no significant effect on the water-holding capacity of fillets. in general, it is possible to use sodium alginate-based active packaging containing vit c, as the allowed and safe additive, to extend the shelf life of chicken fillets as an alternative to conventional traditional polymers.
