   Seasonal Meat Yield and Chemical Composition of Zander (Sander lucioperca Linnaeus,1758) in Beyşehir Lake

چکیده    In this study, seasonal meat yield and chemical composition of zander fish (sander lucioperca linnaeus,1758) in beyşehir lake were investigated. at the end of the study, seasonal net meat rates of zander fish were found as the highest (67,45±0,36%) in the winter and as the lowest (60,74±2,05%) in the spring. according to the results of the analysis, the average dry matter, crude ash, crude protein, crude fat and aw were calculated as 19,89±0,34%, 0,99±0,12%, 18,65±0,22%, 2,04±0,07% and 0,9986±0,003, respectively. as a result of study, meat yield % and crude protein% ratios in spring as fertility of zander samples were different from the other seasons.
